Some call it “Passover Potato Kugel… others call it “Potato Keegel” ( Kigel) (depending on the Yiddish dialect their ancestors spoke).. and still others call it “Potato Nik” But whatever you call it, it is one of the yummiest Ashkenazic Jewish comfort foods. It’s a potato pudding used as a side dish primarily at Shabbat and Holiday meals.

Everyone will claim that their own mother’s Kigel is the best. My mom used to make us what was basically a thin giant crispy potato latke that was cut into wedges. That’s her on the extreme right next to my  father in 1948 or 1949. My grandparents are at the head of the table.

However, this is a popular recipe for traditional potato kugel. Experiment and create your own sizzling family tradition.

Passover Potato Kugel

Ingredients:

  • cynthia lights4 medium sized potatoes
  • 1 small cooking onion
  • 2 eggs slightly beaten
  • ¼ cup whole wheat flour (substitute potato starch for Passover)
  • 4 tablespoons of Galilee Green Olive Oil
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • Sprinkle of sweet paprika

Directions:

  1. Peel and grate potatoes
  2. Take a handful of grated potato and squeeze out liquid and repeat until you’ve done this with all the grated potatoes
  3. Grate onion and add to potatoes
  4. Add the eggs, salt, black pepper and flour. Mix Well!
  5. Preheat oven to 400 F/200 C
  6. Heat olive oil in a bread loaf sized Pyrex pan
  7. Add hot oil to potatoes and mix again
  8. Taste the batter and adjust seasoning. It should tasty salty and peppery. But not too salty or peppery.
  9. Pour mixture into heated pan
  10. Drizzle again with a teaspoon of Galilee Green Olive Oil and sprinkle the top with sweet paprika
  11. Bake until golden brown. About 35 – 40 minutes

You’ve now made a great potato kugel!! ENJOY!!

Can matzo meal or matzo flour be substituted for Passover? Or do you recommend the potato starch for the best result? Definitely will be on the menu this year!

Is there a bakery or store in Nassau County, N. Y. where I can buy a Jewish style Potato-Nik, Not a large latke. I am not rerally into cooking or very gooid at it but I do remeber 25 years ago and beyond when I was growing up that bakeries made the most delicious Potato-Nik round or rectangular shaped pudding tha I would devour before i made it home from the bakery, it was SOOO-good. Can you please tell me if there is some place in Nassau county where I might be able to buy one every shabbos. I would very much appreciate it since I am not very good at cooking.
