I’m always looking for different ways to serve the chicken that makes a weekly appearance at our Shabbat table Friday night. And I don’t like long complicated recipes.
So I put together this delicious dish using things I had on hand and with little twist. I had a bottle of vodka with just two tablespoons left in it. Not enough for a drink but certainly enough to sneak into my chicken.
It was really really good.

Ingredients:
- 4 bottom chicken quarters
- 3 tbsp Galilee Green Olive Oil
- 2 tbsp vodka
- 2 tsp water from olive can
- 4 cloves garlic, chopped
- 1 tbsp dried oregano or 2 tbsp fresh chopped oregano
- 1 tsp turmeric
- 1/3 cup sun-dried tomatoes, chopped
- 2 small tomatoes, chopped
- 1/3 cup olives, chopped
Directions:
- Preheat oven to 350 degrees.
- Mix olive oil, vodka, olive water, and chopped garlic in a bowl
- Pour over chicken pieces and rub both sides with mixture.
- Sprinkle oregano and turmeric on both sides and add fresh and sun-dried tomatoes and olives to the pan on top of the chicken.
- Cook for at least an hour and baste half way through.
- Cook another half hour if you like it well done.
