However, the minute you infuse, or add anything to the olive oil like, garlic, lemon or herbs, you have now given the mixture a medium where bacteria can grow.
So there is a short shelf life of about two weeks in the refrigerator for mixtures like this simple lemon dressing and lemon infused GGOO once they are opened.
That’s why we make our own in small quantities when we want it.
Here is a very simple recipe for a Lemon Olive Oil dressing with just 4 ingredients. I made the illustration above in honor of Bob Newhart who recently past away and who made me laugh when I was in high-school back in Toronto.

Simple Lemon Olive Oil Salad Dressing
Ingredients:
1/4 cup Galilee Green olive oil
1/8 cup fresh Lemon juice
1/2 tsp sea salt
1/2 tsp fresh ground black pepper
Instructions:
Place all the ingredients into a small jar and shake well.
That’s it!
ENJOY! You can add basil, oregano, garlic or other spices and herbs to your taste. Make sure you prepare small amounts and use it up within two weeks.
