There’s something exciting about eating the very freshest food possible. The best way to do that is to sprout seeds and grains. Sprouting in your kitchen is like having a mini garden in the house all year round.  It’s fun to do !

Sprouting Mung Beans and AlfalfaThe best thing about eating sprouts is that you’re getting the most nutritional value from the grain and seed. As soon as the seed starts to break down or germinate you’re eating a tiny little plant – a living food full of nutritional punch!

There are many gadgets and methods to sprout your beans, but here’s my really easy technique for sprouting alfalfa or mung beans. These beans should be readily available at any grocery, bulk or health food store.

  1. Place 2 tablespoons of mung beans or 1 tablespoon of alfalfa beans in the bottom of a mason jar.
  2. Cover the jar opening with a mesh cover and twist the ring of the mason jar onto the jar. I use a cut square of nylon window screening.
  3. Add water to cover the beans and let this sit on your counter for 6-8 hours.
  4. Pour out the water and add new water and swish the beans and spill out the new water
  5. Leave the rinsed beans on your counter and repeat adding fresh water and spilling the water twice a day for up to 4 days.
  6. Your beans are ready to eat when they’ve grown a ½ inch tail.
  7. Rinse the beans one last time and refrigerate in a sealed container.
  8. The sprouts are good for 3-4 days.

Here’s an awesome Mediterranean salad that uses dates and silan date honey that you can make with your newly sprouted beans.

INGREDIENTS:

  • 3 carrots grated
  • ¾ cup alfalfa sprouts – or mung bean sprouts
  • 2 green onions sliced
  • ⅓ cup slivered unroasted almonds
  • ⅓ cup chopped dates or raisins
  • ⅓ cup lemon juice
  • ¼ cup Galilee Green Olive Oil
  • 1 – 2 tablespoons Silan Date Honey* – you can also use Maple Syrup
  • ¼ teaspoon curry powder
  • salt to taste

DIRECTIONS:

      • Combine the carrots, sprouts, green onions, slivered almonds and dates in a medium bowl.
      • Stir together with the lemon juice, olive oil, silan, salt, pepper, garlic and curry powder.

*NOTE: Silan is made of date trees grown near The Jordan River and Sea Of Galilee. It tastes like molasses and is regularly used in Israeli kitchens.
