Stuffed Zucchini from Judi Zauneker
This sensational stuffed zucchini recipe is from Judi Zauneker of San Clemente, California.
I discovered this fabulous photo as a comment on one of MY recent FB posts. It looked so delicious, that I reached out to her for the recipe.
What really caught my attention was the amazing combo of flavors! When she mentioned she also takes a tablespoon of GGOO before breakfast, I thought that this recipe would be great for breakfast with some scrambled eggs!

Made stuffed zucchini brushed with GGOO along with some steamed cauliflower also with GGOO and butter…. and had a tablespoon of GGOO straight — no chaser — before breakfast
I usually don’t follow recipes just make it up as I go. Here’s the “recipe.”
Stuffed Zucchini
Ingredients
- 1 tbsp Galilee Green olive oil (GGOO)
- 1 large zucchini
- 1 tbsp mayonnaise
- fresh basil
- seasonings of your choice
- 2 tbsp Parmesan cheese
Directions:
- Cut a large zucchini lengthwise
- Scoop out the center of the zucchini and place in mixing bowl
- Add GGOO, mayonnaise, spices and cheese to the bowl and mash up the mixture.
- Fill the zucchini halves with the stuffing and bake at 400 F for about 30 minutes or until tender.
