Summertime in Israel is all about the watermelons. Along many highways you’ll see watermelon stands selling this delicious and much loved fruit.
In Yavne’el and many other towns a truck loaded with watermelons drives through the streets and on a loudspeaker announces that the watermelon is for sale “AL Hasakin” ( על הסכין ) or “On the Knife”.
This means that the vendor will cut a square of watermelon for you to taste before you decide if that particular one is good enough to bring home.
It is so worth it!
Watermelon is thought to have been originated in southern Africa. It is contains 6% sugar and 92% water in it by weight. Paired with feta cheese and basil it makes the most refreshing summer salad.
Ingredients:
Salad:
- 3 cups cubed watermelon
- 2 sliced cucumbers
- 2 chopped scallions
- ½ cup chopped fresh basil
- ½ cup crumbled feta cheese
Dressing:
- ¼ cup Galilee Green Olive Oil
- ¼ cup Balsamic vinegar
- 1 teaspoon dijon or honey mustard
- ⅛ teaspoon of: salt, black pepper and garlic powder
Directions:
- Cut and mix fruit and vegetables
- Top with feta cheese
- Prepare the dressing
- Dress and mix before serving
This salad compliments any summer meal and is especially wonderful for entertaining. ENJOY!!!
