Shabbat meals always need a tasty dessert. So, I’m constantly looking for unique dessert recipes that are quick and easy to prepare and have that WOW factor. I never thought baking without wheat flour or sugar could work, but it definitely does!
This is my first attempt in using almond flour and I was pleasantly surprised at how delicious and enjoyable the flavor was. And anything with chocolate chips is always yummy. I didn’t even miss the sugar. (and no artificial sweeteners either!). The Galilee Green Olive Oil provides the healthy “fat” that makes these moist and filling unlike many other gluten-free baked desserts. You’ll love them.
Almond Flour Chocolate Chip Muffins
Ingredients:
- 2 cups almond flour
- 2 eggs
- 2 egg whites
- ½ teaspoon baking soda
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 2 tablespoon of Galilee Green Olive Oil
- 1 cup of chocolate chips
- Dash of salt
- 1 tablespoon of ground coconut (optional – if need to thicken the batter)
Directions:
- Preheat oven to 350F/180C
- Mix all the ingredients together except for chocolate chips
- Fold in chocolate chips and mix thoroughly
- Scoop batter into muffin tin holders
- Bake for 25 minutes
- Remove from the oven and place on a cooling rack
- Makes 10 – 12 muffins
- ENJOY!
These muffins are such a treat and are so versatile. You can make these with dried blueberries or cherries and will still be great. They are a complete WOW!
