We like to prepare hearty soups that are cooked for a long time to bring out the flavors of the vegetables and spices.
But sometimes you just don’t have the time to let the pot of soup simmer all day.
This is a delicious soup that doesn’t need broth but is full of flavor.
It’s great for one or two people. And will warm you up in the winter!
Creamy Squash Spinach Soup
Ingredients:
- 3 cups of fresh sliced spinach
- 1 medium onion sliced
- 3 cups of cubed orange squash
- 1 teaspoon of curry
- 1/2 teaspoon black pepper
- 4 tablespoons Galilee Green Olive Oil (GGOO)
- 1 cup of coconut cream
- salt to taste
Directions:
- In a pot, heat the olive oil and add the sliced onions to caramelize them.
- Once the onions are golden, add the spinach, squash and the spices.
- Mix well and stir fry for 10-15 minutes at medium heat.
- Once everything starts to brown transfer to a food processor, add the cup of coconut cream and a cup of water and blend (add more or less water depending on how thick you like your soup)
- Transfer back to a soup pot, bring to a boil on medium heat and then simmer for 15 minutes..
Enjoy with salad or rice or anything of your choice.

The soup looks great. I make a lot of soup in winter even though I live alone. I have “dinner” for usually 3 days or more so I love that also. I will send a photo next time of a soup I made recently using Galilee Green EVOO. I love Israel as Rabbi knows and am finding some peace in donating a little to Zaka and other entities. We can’t all be there, but we can all help in some way. G-d bless Israel and her people both in Israel and all over the world.
