Ingredients
- 6 overripe tomatoes, cubed
- 1 medium onion, diced
- 1 cup mushrooms, chopped
- 3 tablespoons Galilee Green Extra Virgin Olive Oil
- 2 tablespoons Galilee Green Raw Honey (wildflower works well)
- 1 tablespoon apple cider vinegar
- 1 tablespoon soy sauce or tamari
- 1 tablespoon tapioca flour mixed with 2 tablespoons water
- Sea salt and black pepper to taste
Directions
- Heat Galilee Green Extra Virgin Olive Oil in a wide pan over medium heat.
- Add the diced onion and cook until soft and golden.
- Stir in the mushrooms and cook until they release their liquid.
- Add the cubed tomatoes, honey, apple cider vinegar, and soya sauce.
- Stir well and bring the mixture to a gentle simmer.
- Cook 15–25 minutes, stirring often, until the tomatoes break down.
- Stir the tapioca slurry again, then pour it into the pan.
- Cook 1–2 minutes more until the jam looks glossy and thick.
- Taste and add salt or pepper if you need it.
- Spoon the hot jam over broiled burgers on shredded cabbage. Add avocado, sprouts, pickle, and olives on the side.
Store leftovers in a jar in the fridge for up to one week. Reheat gently before serving.
