Our tradition tells us that meat and wine (for most people) add to the simcha of a festival celebration and many people will go out of their way to make a main dish that includes beef or lamb rather than chicken on the festivals.
Here’s a delicious Galilee Green way to prepare your roast that’s bound to bring smiles to your “meat lovers.” I made an Oyster Blade Roast but it will work for any type… the paste is great on chicken or salmon too!
Galilee Green Oyster Blade Roast
Ingredients:
- 3-4 pound oyster blade roast
- 3 tablespoons GGOO
- 1 head of garlic chopped in food processor
- 2 tablespoons Dijon mustard
- 1 cup chopped fresh basil
- salt and pepper to taste
Directions:
- Make a paste of all ingredients and rub all over meat. Place in a covered roasting pan in a preheated oven (350 F) for 1 hour.
- Meat at this stage will come out just a little pink. Adjust cooking times based on your preference.
- Remove from oven and uncover. Let it rest for about 45 minutes.
- Slice and serve with warmed up gravy from the pan.
