This is one of our standard family favorites on Friday night.

Because the garlic is cooked, it becomes sweet and loses its intensity, so even the kids love it.

Some like to spread the garlic and olive oil mixture right onto their Challah.

Others like to mix this into their Hummus and then spread it on the bread. Still others just like to dip the Challah into the mixture.

However you like it, it’s super easy to make.

Ingredients:

  • 3 bulbs (heads) of garlic
  • Galilee Green Olive Oil
  • 1/4 tsp salt (or to taste)
  • 1/2 tsp zatar

Directions:

  1. Separate the bulbs of garlic into individual cloves and peel them
  2. Place the cloves into a small pot
  3. Cover the cloves with Galilee Green Olive Oil
  4. Add the salt and zatar
  5. Bring to a “boil” (actually when bubbles appear, they are from the water in the garlic, not the olive oil boiling) and simmer until the cloves are soft and golden brown (around 30 minutes)
  6. Let the mixture cool
  7. Place in a dipping bowl and serve with fresh Challah

The trick to this recipe is to use the best quality olive oil like Galilee Green

What is zatar? Is there something that can be substituted for zatar or can I get it in the States? Thanks, I enjoy your oil!

    Shalom Hyacinth, zatar is a middle eastern herb. You might be able to get it at Whole Foods and major US cities where there are large Israeli and Arab communities. Good luck!
