Jeff and Mellisa Brown of Mansfield Texas signed up two years ago for ongoing shipments of Galilee Green as part of their commitment to a healthy life.

In the process of changing how they ate, losing weight and getting more fit, they decided to become health coaches. Today they have their own practice called My 1 Healthy Life.

They eat much the way we do: cut way back on carbs, lots of fresh vegetables, great protein, and increased healthy fats like extra virgin olive oil.

This recipe was adapted from one that showed up on Jeff’s FB page and fit right in with our Galilee Green lifestyle. It looked so delicious we decided to share it with you!

Ingredients:

Galilee Green Olive Oil

The Olive Oil Makes all the difference

  • 1 cup raw cucumber, with peel
  • 1 cup raw peppers, red
  • 1 cup raw tomatoes
  • 1 cup lettuce romaine or other
  • 8 olives olives, black
  • 1 half sliced avocado
  • 1 lb chicken, breast, boneless, skinless (raw)
  • 2 tbsp raw onion
  • 1 tsp Galilee Green olive oil
  • 2 tbsp parsley
  • 1 clove garlic
  • 4 tsp lemon or lime juice

Directions:

  1. Preheat grill to medium-high heat.
  2. After rubbing it with olive oil, place chicken on grill when heated and cook about 5 minutes on each side, or until chicken is thoroughly cooked and no longer pink. Cut chicken into slices.
  3. In a serving bowl, combine parsley, olives, and garlic. Whisk in 4 tsp lemon juice and 1 tsp olive oil. Add lettuce, cucumber, bell pepper, tomato, avocado and onion. Toss to coat ingredients with dressing. Add up to 1 tsp more of lemon juice to taste.
  4. Split salad into two servings and place 6 oz chicken on top each salad.

Fine! Thank you for the great recipe. I especially appreciate the detail that the parsley, olives and garlic are whisked with olive oil first, and only then are the lettuce and onions added.
