We try to avoid cereal grains like wheat, oats, rice and corn as much as possible as they tend to spike sugar levels.
Quinoa is a nutrient-rich whole grain that has been gaining popularity in recent years. It is a good source of protein, fiber, and vitamins and minerals, and it is also gluten-free.
Quinoa tortillas can be used in place of traditional flour tortillas in any recipe. They are perfect for tacos, burritos, quesadillas, and more. They are really simple to make.
Quinoa Tortillas
Ingredients:
- 1 cup quinoa
- 1.5 cups of water
- Galilee Green Olive Oil
- Spices taste (depending if you want them salty or sweet)
Directions:
- Wash and rinse the quinoa well, drain it.
- Soak the quinoa overnight in fresh water.
- Rinse the quinoa very well until the water runs clear (this whole process removes any bitterness)
- Put the washed Quinoa in the blender, with the cup and a half of water and the spices. Blend very well at medium speed. Then increase the speed until you get a nice texture, but not too thick. If it is too thick add a little more water.
- Heat a tablespoon of GGOO in a non-stick frying pan on medium heat and spread it well.
- Pour some batter into the pan and spread it thinly.
- When the edges are golden brown and the tortilla can slide on the pan, flip it carefully.
- When both sides are golden brown it is ready!
You should get 6 large tortillas from this recipe.

How much “dough” in order to get 6 tortillas and do they need to be rolled out (like flour tortillas) ?
Thanks!
