I LOVE FALAFEL. It’s my comfort food and Israel’s National Sandwich.
I must have been feeling nostalgic today as I had a craving for this favorite dish.
Ingredients:
- 3 cups of pre-soaked chickpeas
- ¾ cup of flour
- 1 cup water
- 2 teaspoons soda water (club soda)
- 3 cloves of garlic
- 2 teaspoons salt
- ¼ teaspoon pepper
- 1 teaspoon cumin
- ½ tablespoon each of sweet paprika and hot paprika
- 1 teaspoon dried cilantro – optional
- ¼ to ½ cup Galilee Green Olive Oil for frying
Directions:
- Soak 3 cups of chickpeas overnight
- Place all the ingredients but the olive oil in a blender
- Blend up ingredients until it becomes a coarse mixture
- Chill in the fridge for 2 – 4 hours
- Heat up the oil on a medium heat
- Make small balls off a spoon or special falafel utensil and fry on both sides
- Drain on paper towel
Quick Techina (Tahini) Sauce – 2 tablespoons techina paste, generous squirt of lemon juice, 2 tablespoons of water, salt, garlic powder and cumin. Mix quickly to make a yummy and healthy dressing.
Enjoy with an Israeli salad and techina sauce or stuff falafel balls into a pita with Israeli salad, techina and hot sauce. It is such a treat and you’ll be eating like an Israeli.

What other kinds of flour (other than wheat, as I’m a coeliac) would be suitable for making Falafel?
