Eating healthy doesn’t take the fun or the flavor out of dinner.
Also, it can be quick and easy!
This is one of my favorite meals and I made it in twenty minutes.
If you want to lower the carbs even more, substitute zucchini or broccoli for the sweet potato
Steak Dinner for Two
Ingredients
- 2 minute steaks
- 1 medium sized onion – sliced
- 1/2 cup of sliced mushrooms
- 1 large sweet potato
- 1 avocado wedged
- 1 tomato wedged
- 3 tbsp Galilee Green Olive Oil (GGOO)
- 1/4 tsp black pepper
- 1/8 tsp cayenne pepper
- 1/2 cup red wine
Directions
- Slice the onion and fry in GGOO on medium heat until soft
- Stir in the mushrooms and then add the wine and spices and continue simmering on medium heat for 10 minutes
- While that is simmering place sliced disks of sweet potato in the air fryer at 375 for 20 minutes (turn them over after 10 minutes)
- Pan fry the steaks in some more GGOO
- When the steaks are cooked to your taste, plate them and smother with the onion/mushroom/wine mixture
- Add the sweet potato, avocado and tomato wedges and drizzle on more GGOO and spices to taste.
