Eating healthy doesn’t take the fun or the flavor out of dinner.

Also, it can be quick and easy!

This is one of my favorite meals and I made it in twenty minutes.

If you want to lower the carbs even more, substitute zucchini or broccoli for the sweet potato

Steak Dinner for Two

Ingredients

  • 2 minute steaks
  • 1 medium sized onion – sliced
  • 1/2 cup of sliced mushrooms
  • 1 large sweet potato
  • 1 avocado wedged
  • 1 tomato wedged
  • 3 tbsp Galilee Green Olive Oil (GGOO)
  • 1/4 tsp black pepper
  • 1/8 tsp cayenne pepper
  • 1/2 cup red wine

Directions

  1. Slice the onion and fry in GGOO on medium heat until soft
  2. Stir in the mushrooms and then add the wine and spices and continue simmering on medium heat for 10 minutes
  3. While that is simmering place sliced disks of sweet potato in the air fryer at 375 for 20 minutes (turn them over after 10 minutes)
  4. Pan fry the steaks in some more GGOO
  5. When the steaks are cooked to your taste, plate them and smother with the onion/mushroom/wine mixture
  6. Add the sweet potato, avocado and tomato wedges and drizzle on more GGOO and spices to taste.
